Game Day Meal: NHL Celebration Cocktail – Jamaican Collins

PHILADELPHIA, PA — It’s happened. It’s actually happened! The CBA negotiations have finally reached a resolution and the NHL will finally get to start the 2012-13 season! Hockey fans everywhere are reveling in the good news that their best-loved hockey teams will take the ice again very soon. It was a long wait, and many believed the season to be completely lost, but we are relieved to see the light at the end of the tunnel.
So what should we do to celebrate this fantastic news? Have a cocktail, of course! Today’s cocktail is a tiny taste of the tropics, to get us through these bitterly cold winter days. Mix one up today and raise your glass to hockey!
Jamaican Collins

Ingredients:
2 1/2 oz dark rum
4 oz club soda
1 1/2 oz pineapple juice
1 tsp sugar
1. Shake rum, pineapple juice and sugar in a cocktail shaker with ice.
2. Strain into a collins glass filled with ice cubes.
3. Fill with carbonated water.
