Game Day Meal: Barbecue Ribs

PHILADELPHIA, PA — Who’s hungry? Well we’ve got a perfect game day meal for you, just in time to gear up for the holidays and for the World Junior Championship! Today’s recipe comes to us courtesy of Chantal (@habsgirl4life), Managing Editor of AllHabs.net.
Chantal tells us that the original recipe for this dish came from a cookbook her mom received after getting married in 1974. Over the years, her mom made the recipe her own by tweaking ingredients and quantities here and there. “She made this for us as kids, and the smell of them cooking is still very comforting for me.”
Following in her mother’s footsteps, Chantal has now put her own personal touches into the recipe and has shared it with us. She says this recipe is “very simple”, so let’s get started!
Barbecue Spare Ribs

Prep time: 25 minutes
Yield: 4 servings
Ingredients:
2 tablespoons of butter or margarine
3 pounds of pork ribs
5 red onions, thinly sliced
2 cups of ketchup
1 cup of vinegar
3 tablespoons of brown sugar
2 cups of beef broth
1. Separate the racks of pork into individual ribs.
2. Heat up the butter or margarine in a pot and brown the ribs on medium-high heat.
3. Place the browned ribs in a large oven-safe stock pot. Put the sliced onions on top of the meat.
4. Mix the ketchup, vinegar, brown sugar and broth together in a big bowl. Pour this sauce over the ribs and onions.
5. Cover the pot with aluminum foil and cook in a 350 degree oven for 90 minutes.
Chantal recommends serving the ribs with rice and any vegetable (leeks in this case). She also likes to make them at least one day in advance because she finds “they are even tastier when warmed up!”
