Game Day Meal – Ginger Rum Shandies

PHILADELPHIA, PA — Holiday meals can be some of the most traditional gatherings of the year. In particular, Thanksgiving dinner has many of the most traditional dishes that we look forward to each and every year. That’s why for this week’s Game Day Meal, we’re not going to mess with tradition!
It’s Thanksgiving week for our friends in the United States and we want to help them celebrate. We’ve got a robust, autumn-inspired cocktail to enjoy while you wait for the turkey and mashed potatoes to finish cooking or if you just want to get into the holiday spirit.
Ginger Rum Shandies

Prep time: 25 minutes
(Makes 4 drinks)
Ingredients:
10 thin slices peeled ginger, plus more for grating
1 cup sugar
1/2 cup apple juice
6 ounces spiced rum
2 cups wheat beer (I used Blanche de Bruxelles)
Apple slices, for garnish
1. To make the ginger syrup: Combine the sliced ginger, sugar, and 1 cup water in a small saucepan over medium-high heat. Bring to a boil, stirring until the sugar dissolves; reduce the heat to medium and cook until syrupy, 15 to 20 minutes. Strain and let cool completely.
2. For each cocktail, combine 2 tablespoons each of the ginger syrup and apple juice, 1 1/2 ounces rum and 3 or 4 gratings of ginger in a cocktail shaker with ice. Shake well and pour into a short glass. Top with 1/2 cup beer and garnish with apple slices.
Keep the remaining ginger syrup you make to mix with club soda for your own homemade ginger ale!
